Ingredients

  • ⅓ cup (80 ml) vegetable oil
  • 600 g chicken thigh fillets, cut into 3 cm pieces
  • 3 garlic cloves, roughly chopped
  • 1 bunch choy sum, cut into 3 cm lengths
  • 1 tsp chicken stock powder
  • 2 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 2 tbsp dark soy sauce
  • 1 tsp sugar
  • 1 kg Hokkien noodles
  • Salt and white pepper, to season
  • 6 medium spring onions, thinly sliced
  • 3 cups bean sprouts
  • Chilli sauce, to serve

Instructions

  1. Heat the oil in a large, heavy-based saucepan over medium heat. Add the chicken and sear for 3 minutes per side, or until well-browned. Stir through the garlic and stir-fry for 1 minute, followed by the choy sum. Add the stock powder, the sauces, sugar and 1 ½ cups water. Bring to a simmer. Taste the liquid – it should be strong-tasting and salty.
  2. While the chicken is cooking, using a paring knife, poke a few holes into the pack of Hokkien noodles and microwave for 4 minutes. Massage the bag to break up the noodles, then add them to the pan with the chicken. Toss well to coat and cook for a further 3 minutes, or until the noodles have absorbed all the liquid.
  3. Season to taste with salt and white pepper as you like. Stir through the spring onion (reserve a little to garnish!) and bean sprouts. Transfer the quick chicken noodles to a large serving platter, sprinkle with the reserved spring onion and serve with the chilli sauce.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
