Margherita pizza

"It's always a challenge to get my kids to eat the same meal! But Margherita pizza is something they both enjoy without complaints. I'm always looking for shortcuts - so supermarket bought pizza base is the way to go! This is a quick easy meal if you don't have much time!"

Ingredients

  • 1 store-bought pizza base
  • 1–2 tbsp tomato paste
  • 2 truss tomatoes, thinly sliced
  • 2 bocconcini cheese balls, sliced
  • 50 g (½ cup) grated tasty or mozzarella cheese
  • handful basil leaves
  • green salad, to serve

Instructions

  1. Preheat the oven 200˚C. Place the pizza base on a baking paper lined baking tray.
  2. Spread the base with tomato paste and top with the sliced tomato, bocconcini and grated cheese. Bake for 15 - 20 minutes or until the base is golden and crisp and the cheese is melted and bubbling. Scatter with the basil leaves, slice and serve with a green salad.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
