Chicken wings, inexpensive and a classic example of great things coming from small packages. The air fryer gives a brilliant opportunity to create the chicken skin of our dreams, whilst keeping the interior succulent and tender.

Ingredients

  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp sea salt flakes
  • ½ tsp ground black pepper
  • 500 g chicken wings
For the ranch dressing
  • ½ cup sour cream
  • ½ cup whole egg mayonnaise
  • 60 g blue cheese
  • ¼ cup buttermilk
  • Salt and black pepper
  • 1 tbsp finely chopped dill
  • 1-2 tbsp lemon juice (optional)

Instructions

  1. Preheat the air fryer to 200˚C.
  2. To make the ranch dressing, combine the ingredients in a large bowl and whisk well to combine. Refrigerate until needed.
  3. To marinate the chicken wings, in a large mixing bowl, combine all the remaining ingredients (except the chicken wings) and mix well to combine. Add the wings to the bowl and toss well to coat with the seasoning blend.
  4. Place the seasoned chicken wings into the air fryer in a single layer (you may need to cook in multiple batches depending on the size of your air fryer). Cook for 10 minutes, then turn the wings and cook for a further 8 minutes, until browned and cooked through.
  5. Transfer the crispy air fryer chicken wings to a large serving platter and serve with the ranch dressing for dipping.
Note
  • For a smoother dressing, you can also blend the ranch dressing using a stick mixer, simply add the dill after blending to retain some herby texture. This recipe is also excellent with some hot sauce served on the side with the ranch!

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
