Sandwiches were a massive part of Megan Burslem’s family life growing up. From sandwiches, toasties and jaffles, this chicken sandwich was a beloved Burslem family favourite.

Ingredients

  • 2 chicken breasts
  • Softened butter, for spreading
  • 1 loaf sourdough, sliced
  • ½ cup mayonnaise  
  • 1 avocado, sliced
  • ½ lemon, cut into wedges
  • 1 wedge parmesan cheese, thinly shaved, to serve
  • 1 cos lettuce, leaves separated
  • Salt and black pepper

Instructions

  1. Place the chicken breasts into a medium saucepan and cover with water. Bring to the boil, then reduce to a rapid simmer. Cook for 12 minutes, then remove from the heat and allow to stand for a further 10 minutes, or until the chicken is cooked through. Using tongs, remove the chicken to a medium bowl and allow to cool.
  2. Once cooled, use two forks to shred the chicken.
  3. To assemble the sandwich, generously butter the sliced bread, followed by a layer of mayonnaise and avocado slices. Squeeze some lemon juice over the avocado, then layer shaved parmesan cheese, shredded chicken, a generous pinch of salt and black pepper, followed by lettuce leaves and a second slice of bread. This sandwich can be served toasted or fresh.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
