Pork scotch fillet, otherwise known as pork neck, is one of Adam Liaw's favourite cuts. A simple steak, seasoned with salt, pepper and olive oil can be the best way to enjoy its prized marbling. Serve with a wilted fennel and apple salad for that restaurant-like finish.

This classic Cantonese-style steamed pork dish features spare ribs marinated in salted fermented black beans, Shaoxing wine, ginger, garlic, sugar and chilli, which adds a savoury, slightly sweet and spicy flavour. Steaming keeps the meat juicy and tender.

Thin slices of pork belly are perfect for getting creative with your pork dishes. In Japan, they wrap everything from cherry tomatoes to bunches of lettuce around before cooking. This recipe showcases the clever technique of using skewers to pass pork through flour, eggs, and panko, not only to avoid messy hands but also to allow draining at an angle for a crisp finish.
