Ingredients

  • 800 g Desiree potatoes, peeled, cubed
  • 6 garlic cloves
  • 60 g butter, chopped
  • 1-2 tbsp milk (optional)
  • ¾ cup (180ml) cream
  • 400 g frozen spinach, thawed, drained, and warmed
  • 100 g feta, crumbled

Instructions

1. Place the potatoes in a large saucepan and cover them with cold water. Add a pinch of salt and bring to a boil, then reduce the heat and simmer for 25–30 minutes or until tender. Drain well.

2. Place the garlic in a small microwave dish with a tbsp of water and a tbsp of olive oil. Microwave on a low-medium setting for 4 mins. Once softened, gently squeeze garlic into the potato.

3. Using a stick blender, mash the potato, garlic and 30g butter until combined. Use a little warm milk if you need to loosen the potato. Set aside.

4. Heat the remaining butter and cream in a saucepan on low and once melted, mix into the potato. Layer the mash, spinach and feta in a wide bowl. Finish with salt and mash at the table to serve.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
