For a long time, Indian-born, UK-based chef Atul Kochhar would hear people tell him cooking Indian food took too long.  So he set off on a mission to show people how to beat the clock and have a pot of delicious curry on the table in just half-an-hour.

His method? Cut time by pre-preparing sauces and pastes in freezable batches, in advance. "I take the pain out of cooking by pre-preparing a few things like , and in many recipes I have used tomato paste in place of fresh tomatoes," Kochhar explains. 

His tips mean you can have a bowl of tropical  or a quick vegetarian  in just 30 minutes. What's more, nothing's deep-fried and all the recipes feature healthy ingredients that are great for any busy person.
