3. Estonia - Elina Nechaayeva

Layered chocolate, cherry and kirsch are towering over the stage (or your plate). This elegant and rich sponge cake pairs perfectly with the classical stylings of Estonia's operatic notes. This  is a culinary challenge and the same can be said for the high notes that Elina is hitting - so we say,  go big or go home.
