A 10-recipe ode to the comfort of a chicken pie

From hearty family classics to cheese dumpling topped pot pies, here are a parcel of chicken pies to suit all tastes.

As Adam Liaw , there's little more comforting, or satisfying, than sinking into a fresh, hot chicken pie.

Here are 10 favourites, from traditional family pies to recipes with the flavours of Greece, the Middle East and more.
"Chicken pot pie was something that my grandma always used to make for us," says Adam Liaw of this hearty pie, which he shared in season 1 of The Cook Up.  While many pies have pastry top and bottom, a pot pie is baked in a dish or pan, with a layer of pastry on top. And Adam's recipe makes things even easier, using frozen puff pastry.

"This pie is one of my all-time favourites and brings together some of Greece’s most popular ingredients – silverbeet, haloumi, Kalamata olives, rice and filo pastry. It takes a little while to prepare but don’t be put off, I promise it will be well worth the effort," says Anneka Manning of this golden filo pie.

With its golden flaky pastry and Moroccan-spiced filling with a hint of sweetness from the dates, this family-sized pie makes a great winter dinner.
Add a spoonful of duck fat to your pie crust for an extra golden finish.

Circling back to the pot pie idea, here's one with a topping twist: instead of pastry, Donal Skehan has topped this one with golden cheese dumplings. It's made using the meat from a cooked chicken so while it looks festive and tastes delicious, it's quite easy to do.

Here's another great pie made using cooked roast chook, shared by Simon Marnie in a "Keep a Lid on It' episode of the new season of The Cook Up With Adam Liaw. Chicken and leek in bechamel are covered with a layer of buttery pre-made puff pastry.

Quick chicken pies

A quick sour cream, mustard and lemon mix makes for an easy alternative to the white sauce often used in chicken pies in this easy recipe from Donna Hay.

"I love a good Thai chicken curry, fragrant with spices, chilli and ginger, and creamy with coconut milk. This is my pastry-topped tribute to that dish," says Paul Hollywood of this recipe, which has a flavourful curry chicken and sweet potato filling under a homemade shortcrust lid.

They are more commonly seen in sweet desserts, but the thin strands of kataifi pastry make an excellent crispy topping for this hearty chicken pot pie.

You can make this as one big pie or eight individual pies. The base is shortcrust pastry, the top puff pastry, encasing a fragrant and mildly spiced curried chicken filling. Part of the secret to the flavour is marinating the chicken overnight.

Rather than the chicken breast or thighs, or roast chicken meat, used in many pies, this impressive pie is made with chicken sausages, encased in a flaky pastry.
